Gluten Free Pizza

One of the dreadful things about going gluten free is having to give up good pizza!  I have tried and tweaked our gluten free pizza crust until we finally, really like it.

The flour I use is cassava flour, but you can try substituting your favorite gluten free flour.  I add arrow root flour, which gives the crust more of a gluten pizza crust texture.  Also, adding more eggs and not kneading the dough help make this crust a winner.

Directions for Pizza Crust

I make our pizza, like almost everything else, in a cast iron skillet.  Preheat the oven to 400 degrees and place the skillet in there as you’re preparing the dough.

In a mixing bowl, add cassava flour, arrow root flour, baking powder and sea salt.  Mix the dry ingredients, then add the eggs.  Remove hot skillet from the oven and place your butter in the skillet to melt.  Once melted, pour butter into the batter and mix well.

Pour the gluten free dough into the skillet and cook for 15 minutes.  This will allow the dough to cook enough for you to add your toppings.

After the 15 minutes, add your toppings and return to the oven for about 10 minutes.  All of your meat toppings should be precooked.  Once the cheese is melted, I turn the broiler on and brown the cheese.  This takes around 3 minutes.

Our Pizza Toppings

Who else loves pineapple on pizza?  Our family loves this topping!  First, I added the sauce.  Then I added cooked, seasoned hamburger meat, pineapples and cheese.

  • 3 tablespoons arrow root flour
  • 1/2 tablespoon baking powder
  • 1 teaspoon sea salt
  • 2 eggs
  • 2 tablespoons butter

Instructions
