Simple Tomatoes and Eggs Dinner

It was getting close to dinner time and the struggle was real!  What am I going to fix for dinner?  I thought about what we have on hand and knew it had to involve eggs.  Our hens have been laying an abundance lately.  The dinner was a simple tomatoes and eggs dinner, and everyone loved it!

The flavors of this meal will make you think of a pasta dish.  It’s gluten free and dairy free, yet I thought it still had a creamy texture.  Simple tomatoes and egg dinner will definitely be showing up on our table again!

 

Ingredients for Tomatoes and Eggs Dinner

  • Jar of Crushed Tomatoes – 1 quart jar .
  • Eggs
  • Oregano – dried
  • Basil – dried
  • Balsamic Vinegar
  • Salt to taste

I served this over brown rice.  My family did add shredded cheese to theirs plates, but I kept mine dairy free.

How to Cook this from Scratch Dinner

In a saute pan, add crushed tomatoes, oregano, basil, and salt.  Bring to a slow boil on medium heat.  Once it was boiling, I cracked the eggs into the tomatoes spacing them around the pan.

 

 

Let the eggs cook until the whites are starting to turn white.  Cover and cook until the eggs are done.

Remove lid and add balsamic vinegar.  Serve over rice or with a baguette.

Pots and Pans I Use!

When it comes to cooking, the quality of pots and pans does matter.  I’ve had these Revere Ware pots and pans for almost twenty years!  They are very durable and not heavy.  Stainless steel with a copper clad.  Unfortunately, they don’t make them anymore.

Ingredients
  

  • 1 Quart Crushed Tomatoes
  • 6 Eggs
  • 1 1/2 tsp Oregano dried
  • 1 1/2 tsp Basil dried
  • 1/2 tbsp Balsamic Vinegar
  • Salt to taste

Instructions
 

  • In a saute pan, add crushed tomatoes, oregano, basil, and salt
  • Bring to a slow boil on medium heat.
