One Pot Meal - Chicken and Veggies
Perfect cool weather meal, tasty, nutrient packed.
- 2 Chicken Breasts
- 4 Potatoes Medium sized, chopped.
- 1 Head Broccoli Chopped
- 1/2 Onion
- 3 Garlic Cloves Large sized, minced.
- 2 Tablespoons Butter Olive Oil or Avocado Oil works.
- 1/3 Cup Water
- Salt and Pepper to taste.
First, add cubed potatoes along one side of the dish.
Next, cut chicken breasts in half, lengthwise, and place in the middle of the casserole dish.
Place broccoli on the other side of the chicken.
Add onion and garlic to the top of the other ingredients.
Pour 1/3 cup of water into the dish.
Cover and cook at 400 degrees for 40 minutes, or until chicken is done.
